In Kitchen Go-Go, we love creating fun and healthy snacks. This Lemon Roasted Asparagus is a perfect example of a simple and nutritious dish the whole family can enjoy.
Ingredients
(This recipe makes a large batch, but can easily be cut in half to feed a smaller crowd.)
- 2 bunches (about 2 lbs) asparagus, trimmed
- 1 lemon – half squeezed over the asparagus, half sliced into rings
- 1 tablespoon olive oil – to drizzle and keep the asparagus moist
- Salt & black pepper – for seasoning
How to cook
Oven Method:
- Prep – Rinse, pat dry, and trim the woody ends of the asparagus.
- Arrange – Spread asparagus on a large, rimmed baking sheet in a single layer. Drizzle with olive oil, season with salt and pepper, and roll lightly to coat.
- Add lemon – Squeeze half a lemon evenly over the asparagus. Arrange lemon slices over the top.
- Bake – Preheat the oven to 425˚F (218˚C) and roast for 12-15 minutes, or until asparagus is tender with lightly crisp edges.
Air Fryer Method:
- Prep – Rinse, pat dry, and trim the woody ends of the asparagus.
- Arrange – Toss asparagus with olive oil, salt and pepper, in a bowl.
- Air Fry – Preheat the air fryer to 375˚F (190˚C). Place asparagus in a single layer in the basket.
- Cook – Air fry for 6-8 minutes, shaking the basket halfway through. Squeeze lemon over before serving and garnish with lemon slices.
