Ingredients
- Rainbow carrots – you’ll need 3 bunches
- 1 tablespoon of avocado oil – to drizzle the carrots an keep them moist.
- Kosher sea salt and crack peppercorns – these simple seasonings are all you need.
How to cook
Oven Method:
- Prep – Rinse, pat dry, and trim carrots.
- Arrange – Place the carrots on a large, rimmed baking sheet in a single layer. Drizzle with avocado oil, season with salt and pepper, and roll lightly to coat.
- Bake – Preheat the oven to 425˚F (218˚C) and roast for 20-25 minutes, or until carrots are tender and slightly caramelized, flipping halfway through.
Air Fryer Method:
- Prep – Rinse, pat dry, and trim carrots.
- Arrange – Toss carrots with avocado oil, salt, and pepper in a bowl.
- Air Fry – Preheat the air fryer to 380˚F (193˚C). Place the carrots in the basket in a single layer and cook for 12-15 minutes, shaking the basket halfway through, until tender and lightly crispy.
